Honey Cake (medovik) Recipe

Honey Cake, also known as Medovik, is a delightful dessert originating from Eastern Europe. It's famous for its sweet honey flavor and soft, layered texture. This cake is traditionally made with simple ingredients including flour, sugar, eggs, and of course, honey, which gives it its distinct taste. However, in our variation, the honey is omitted, making it a unique take on the classic recipe.

🥗 Ingredients:

  • flour (100g)
  • honey (30g)
  • sugar (30g)
  • butter (15g)
  • eggs (50g)
  • sour cream (50g)
  • baking soda or baking powder (1g)

🍳 How to cook (8 servings):

Cooking Time: 1 hourPreperation Time: 20 minutes

Preparation

Begin by preheating the oven to 180°C (350°F). In a large bowl, mix together the flour, sugar, softened butter, and baking soda or baking powder. In a separate bowl, beat the egg and then incorporate it into your dry ingredients mixture. Mix until a dough forms.

Baking

Divide the dough into equal parts and roll out into layers approximately the thickness of a pancake. Bake each layer for about 5-7 minutes or until golden brown.

Frosting

While the layers are cooling, prepare your sour cream frosting by beating the sour cream with some sugar to taste, until smooth and spreadable.

Assembly

Once the layers have cooled, assemble the cake by spreading the sour cream frosting between each layer. Stack the layers on top of each other and frost the top and sides of the cake.

Serving

Let the cake set in the refrigerator for a few hours before slicing and serving. Enjoy your unique take on the classic Honey Cake, now without honey.
