Ingredients

- 2 large eggs - 2 corn tortillas - 1 cup of fresh tomatoes, chopped - 1/4 cup of onions, diced - 1 clove of garlic, minced - 1 small jalapeΓ±o, diced - 2 tablespoons of olive oil - Salt and pepper to taste - Fresh cilantro, chopped (optional) - Avocado slices (optional)

Instructions

1. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the chopped onions, garlic, and jalapeΓ±o. SautΓ© until the onions are translucent. 2. Add the chopped tomatoes to the pan and cook for about 5-7 minutes, until the tomatoes are soft and the mixture begins to thicken. Add salt and pepper to taste. 3. In a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Fry the corn tortillas until they are slightly crispy. Remove and set aside. 4. In the same skillet, fry the eggs to your desired doneness (sunny-side up is traditional). 5. To assemble, place each fried tortilla on a plate, top with a fried egg, and spoon the tomato mixture over the top. 6. Garnish with fresh cilantro and avocado slices if desired. Serve immediately.
