Preparation of The Potatoes

1. Preheat the oven to 425°F (220°C). 2. Carefully place each potato between two chopsticks or wooden spoons, and slice the potatoes crosswise at 1/8 inch intervals, making sure not to cut all the way through. The chopsticks will act as a guide to prevent you from slicing through the potato. 3. Thinly slice the bacon into pieces. 4. Peel and finely mince the garlic. 5. Gently fan out the slices of each potato and insert pieces of bacon and minced garlic between the slices. Drizzle with olive oil and season with salt and pepper to taste.

Bake in the preheated oven for about 45-60 minutes, or until the potatoes are tender on the inside and crispy on the outer edges. Baste the potatoes occasionally with the pan juices to keep them moist and flavorful.
