Prepare the Octopus

1. Clean the octopus thoroughly. Remove the beak, eyes, and innards. 2. In a large pot, bring water to a boil. Add salt and a bay leaf. 3. Submerge the octopus in the boiling water and cook for about 45-60 minutes until tender. 4. Once tender, remove the octopus from the water and let it cool. 5. Cut the octopus into bite-sized pieces.

Prepare the Potatoes

1. In another pot, boil water and add salt. 2. Peel and cube 3-4 potatoes. 3. Add the potato cubes to the boiling water and cook until they are tender but not mushy, about 10-15 minutes. 4. Drain the potatoes and let them cool.

Combine Ingredients

1. In a large bowl, combine the octopus pieces, cooled potato cubes, and a handful of fresh arugula (rukola). 2. Drizzle with olive oil and lemon juice. 3. Season with salt, pepper, and any additional herbs such as parsley or dill. 4. Toss gently to combine all ingredients evenly.

Serve

1. Transfer the salad to a serving dish. 2. Garnish with extra herbs or a sprinkle of paprika for added color and flavor. 3. Serve immediately and enjoy your refreshing Octopus Salad!
