Dough Preparation

1. Mix approximately 100 grams of flour with a pinch of salt in a large bowl. 2. Make a well in the center and add half an egg and approximately 30 mL of water. 3. Mix until a smooth dough forms. If the dough is too sticky, add a little more flour. Wrap in plastic and rest for 30 minutes.

Filling Preparation

1. Cook approximately 20 grams of onion in 5 grams of butter until soft and golden. 2. Mix the cooked onion with approximately 50 grams of mashed potatoes, 30 grams of cheese, and season with salt and pepper to taste.

Assembly and Cooking

1. Divide the rested dough into small pieces and roll out into thin circles. 2. Place a spoonful of filling in the center of each dough circle. 3. Fold the dough over the filling and press the edges to seal. 4. Boil in salted water for about 5 minutes, until they float to the top, or pan-fry until golden brown.
