Step 1: Cook the Quinoa

Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes or until the water is absorbed. Remove from heat and let it cool.

Step 2: Prepare the Vegetables

While the quinoa is cooking, dice 1 avocado and 2 medium-sized tomatoes. Chop 1 small red onion and 1/4 cup of fresh cilantro. Set aside.
