Ratatouille is a classic French Provençal stewed vegetable dish, originating from Nice.   • eggplant (100g)
  • zucchini (100g)
  • tomato (50g)
  • bell pepper (50g)
  • potato (50g)
  • onion (30g)
  • olive oil (20g)
  • garlic (5g)

Cooking Time: 40 minutesPreperation Time: 15 minutes

Step 1: Prepare Vegetables

Wash all the vegetables thoroughly. Dice the eggplant, zucchini, and bell peppers into 1-inch cubes. Slice the onions thinly. Mince the garlic cloves.

Step 2: Cook Vegetables

In a large pan, heat olive oil over medium heat. Add the onions and garlic, sauté until translucent. Add the bell peppers and cook until soft. Stir in the eggplants and zucchini, cooking until they start to brown.

Step 3: Add Tomatoes and Herbs

Add the diced tomatoes, thyme, and rosemary to the pan. Season with salt and pepper. Stir well to combine all ingredients.

Step 4: Simmer

Lower the heat and cover the pan. Allow the mixture to simmer for about 30-40 minutes, stirring occasionally, until all the vegetables are tender and the flavors meld together.

Step 5: Adjust Seasoning and Serve

Taste and adjust seasoning if necessary. Serve hot as a side dish or a main course. Garnish with fresh basil if desired.
