Ingredients

- 4 large eggs - 1/4 cup diced bell peppers - 1/4 cup diced onions - 1/4 cup diced tomatoes - 1/4 cup spinach - Salt and pepper to taste - 1 tbsp olive oil - Crackers (to serve)

Instructions

1. In a medium bowl, whisk the eggs together with a pinch of salt and pepper. 2. Heat the olive oil in a large non-stick skillet over medium heat. 3.
