- eggs (100g)

Ingredients
1 tablespoon olive oil 1 onion, finely chopped 2 cloves garlic, minced 1 bell pepper, diced 1 can (400g) diced tomatoes 20 grams beans, cooked 4 cups mixed greens (spinach, kale, etc.) 4 large eggs Salt and pepper, to taste 1 teaspoon cumin 1 teaspoon paprika Fresh cilantro or parsley, for garnish
Instructions
1. Heat olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. 2. Add the garlic and bell pepper, and cook for another 5 minutes until softened. 3. Stir in the diced tomatoes, cooked beans, cumin, and paprika. Season with salt and pepper. Simmer for 10-15 minutes until the sauce thickens. 4. Add the mixed greens to the sauce and cook until wilted. 5. Make 4 small wells in the sauce and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking. 6. Garnish with fresh cilantro or parsley before serving.
Serving
Serve hot with crusty bread or pita for dipping.
