Prepare the Marinade

In a large bowl, combine the olive or vegetable oil, vinegar or lemon juice, minced garlic, and spices like paprika, cumin, and coriander. Add optional yogurt for a creamier marinade. Season with salt and pepper to taste. Mix well.

Marinate the Meat

Cut your choice of meat (chicken, lamb, pork, or beef) into chunks. Place the meat chunks into the marinade, making sure each piece is evenly coated. Cover the bowl and refrigerate for at least 4 hours, or overnight for best results.

Prepare Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning. Chop onions into chunks. Alternate threading meat and onion chunks onto the skewers.

Grill the Kebabs

Preheat your grill to medium-high heat. Place the skewers on the grill, cooking each side for 3-5 minutes or until the meat is thoroughly cooked and has a nice char. Remove the skewers from the grill and let them rest for a few minutes before serving.
