Ingredients

- 2 large eggs - 1 cup chopped tomatoes - 1/4 cup diced bell peppers - 1/4 cup chopped onions - 1 clove garlic, minced - 2 tbsp olive oil - Salt and pepper to taste - 2 slices of rustic bread - Fresh parsley and chives for garnish

Instructions

1. Heat 1 tablespoon of olive oil in a pan over medium heat. Add chopped onions, bell peppers, and garlic. Sauté until they are softened and aromatic. 2. Stir in the chopped tomatoes and cook until they begin to break down and form a chunky sauce. Season with salt and pepper. 3. In a separate pan, heat the remaining olive oil and fry the eggs sunny-side up. 4. Toast the slices of rustic bread until they are golden brown. 5.
