  • sugar (50g)
  • flour (75g)
  • eggs (120g)
  • vanilla extract (5g)

Prepare the Sponge Cake

Preheat your oven to 350°F (175°C). Grease and line a 10x15-inch jelly roll pan with parchment paper. In a bowl, beat eggs and sugar until thick and pale. Sift together flour and baking powder, then fold into the egg mixture. Spread the batter evenly in the prepared pan. Bake for 12-15 minutes, or until the cake springs back when touched.

Roll the Cake

Once baked, immediately turn the cake onto a clean, damp kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper. Starting at the short end, roll the cake and towel together. Allow it to cool completely.

Prepare the Filling

Whip the heavy cream with sugar and vanilla extract until stiff peaks form. Gently fold in sliced fresh strawberries.

Assemble the Swiss Roll

Unroll the cooled cake and spread the strawberry cream filling evenly over the surface. Re-roll the cake without the towel, making sure the seam is on the bottom. Optional: dust the top with powdered sugar for an elegant finish.
