• 2 cups sushi rice • 2 ½ cups water • 1/3 cup rice vinegar • 3 tbsp sugar • 1 ½ tsp salt • 10 sheets nori • 200g fresh salmon or tuna, sliced into strips • 1 cucumber, julienned • 1 avocado, sliced • Soy sauce, for dipping • Pickled ginger • Wasabi For the sauce: • 1/4 cup mayonnaise • 1 tbsp sriracha • 1 tsp soy sauce • 1 tsp lemon juice
Prepare the Sushi Rice
1. Rinse the sushi rice under cold water until the water runs clear. 2. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. 3. Once the rice is cooked, transfer it to a large bowl. 4. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. 5. Pour the vinegar mixture over the rice and gently fold it in with a spatula. Allow the rice to cool to room temperature.
Assemble the Sushi Rolls
1. Place a bamboo sushi mat on a flat surface and cover it with plastic wrap. 2. Lay a sheet of nori on the mat, shiny side down. 3. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. 4. Arrange a strip of salmon or tuna, cucumber, and avocado along the bottom edge of the nori. 5. Lift the edge of the bamboo mat closest to you and begin to roll it away from you, applying gentle pressure to ensure a tight roll. 6. Use a sharp knife to slice the roll into 6-8 pieces. 7. Repeat with the remaining ingredients.
Make the Sauce
1. In a small bowl, whisk together the mayonnaise, sriracha, soy sauce, and lemon juice until smooth. 2. Drizzle or serve alongside the sushi rolls.
