🌎 General/International: Breads

🥗 Ingredients:

  • wheat flour (60g)
  • water (10g)
  • eggs (30g)
  • sugar (8g)
  • yeast (1.5g)
  • butter (7g)
  • salt (1g)

🍳 How to cook (1 serving):

Cooking Time: 30 minutesPreperation Time: 2 hours 30 minutes

Preparing the Dough

Begin by mixing approximately 50-70 grams of wheat flour with a pinch of salt, about 5-10 grams of sugar, and 1-2 grams of yeast in a large bowl. Gradually add half an egg and roughly 5-10 grams of butter or oil, mixing until the dough starts to come together. Slowly incorporate a small amount of water as needed until the dough is smooth and pliable.

Kneading the Dough

Transfer the dough onto a floured surface and knead for about 10 minutes or until it becomes elastic. This process develops the gluten, which gives the bread its characteristic soft and fluffy texture.

First Rise

Place the dough in a lightly oiled bowl, covering it with a cloth. Let it rise in a warm place for 1-2 hours, or until it has doubled in size. Yeast fermentation causes the dough to rise, creating air pockets that contribute to the bread's lightness.

Shaping and Second Rise

Punch down the risen dough to release air bubbles, then shape it into a loaf. Allow it to rise again on a baking sheet until it has nearly doubled in size, for approximately another hour.

Baking

Preheat the oven to 190°C (375°F). Brush the loaf with the remainder of the beaten egg for a shiny, golden crust. Bake for 25-30 minutes, or until the top is golden brown and the bread sounds hollow when tapped on the bottom. Let it cool before slicing.
