Adjarian Khachapuri Recipe

Adjarian Khachapuri is a traditional Georgian dish, notably from the Adjara region, which captures the rich flavors and culinary heritage of Georgian cuisine. This boat-shaped bread is enticingly filled with a hearty mixture of cheese and topped with a raw egg and a knob of butter just before it finishes baking. The result is a decadently melting cheese center with a perfectly cooked egg that blends seamlessly with the soft, warm bread upon serving. This dish not only offers a delicious taste experience but also provides a substantial nutritional profile, making it a favorite for meals that require a satisfying and comforting touch.

🌎 Georgian: Bread

🥗 Ingredients:

  • dough (175g)
  • cheese (125g)
  • egg (50g)
  • butter (12g)

🍳 How to cook (1 serving):

Cooking Time: 20 minutesPreperation Time: 1.5 hours

Dough Preparation

Start by mixing the wheat flour, water, yeast, salt, and sugar in a large bowl until a smooth dough forms. Knead the dough for about 10 minutes until it's elastic. Let it rise in a warm place until doubled in size, typically about 1 to 1.5 hours.

Filling and Shaping

Preheat your oven to a high temperature (around 250°C or 482°F). On a floured surface, roll out the dough into an oval shape. Mix the cheeses together and spread them evenly over the dough, leaving a border around the edge. Pinch the ends of the dough to create the characteristic boat shape of the Adjarian Khachapuri.

Baking

Bake in the preheated oven for about 15 minutes, or until the bread starts to turn golden brown. Carefully remove the khachapuri from the oven, and create a well in the center of the cheese filling. Crack an egg into this well, and return to the oven for an additional 3-5 minutes, or just until the egg white sets but the yolk remains runny.

Serving

Remove the khachapuri from the oven and place a piece of butter on top of the hot egg. The butter will melt into the egg and cheese, adding a rich flavor. Serve immediately, encouraging diners to mix the egg and butter into the cheese before tearing off pieces of the bread to dip into the cheesy mixture.
