Prepare the Crust
In a large bowl, combine 2 1/2 cups of all-purpose flour, 1 teaspoon of salt, and 1 teaspoon of sugar. Add 1 cup of cold, unsalted butter, cubed. Use a pastry cutter or two knives to cut the butter into the flour mixture until it resembles coarse crumbs. Gradually add 6-8 tablespoons of ice water, stirring until the dough begins to come together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
Prepare the Apple Filling
Peel, core, and slice 6-7 medium-sized apples (a mix of tart and sweet varieties work well). In a large bowl, toss the apple slices with 3/4 cup of granulated sugar, 1/4 cup of packed brown sugar, 1 tablespoon of lemon juice, 1 teaspoon of ground cinnamon, 1/4 teaspoon of ground nutmeg, and 1/4 teaspoon of ground allspice. Let the mixture sit for 15 minutes to draw out the juices.
Assemble the Pie
Preheat your oven to 425°F (220°C). On a lightly floured surface, roll out one disk of dough to fit a 9-inch pie pan. Transfer the dough to the pie pan and trim the edges, leaving about a 1-inch overhang. Pour the apple filling into the crust, ensuring the apples are evenly distributed. Dot the filling with 2 tablespoons of unsalted butter, cut into small pieces.
Top the Pie
Roll out the second disk of dough to fit over the apples. You can opt for a full top crust or create a lattice design. Place the dough over the apples and trim the edges to match the bottom crust. Press the edges together and flute them to seal. Cut several small slits in the top crust to allow steam to escape. If desired, brush the top crust with an egg wash made of 1 beaten egg mixed with 1 tablespoon of water, and sprinkle with sugar for extra sparkle.
Bake the Apple Pie
