Ingredients
1. 2 medium beets, peeled and grated 2. 1 carrot, peeled and grated 3. 1 potato, peeled and cubed 4. 1 onion, chopped 5. 2 cloves garlic, minced 6. 1 tablespoon vegetable oil 7. 4 cups vegetable broth 8. 1 tablespoon vinegar 9. 1 bay leaf 10. Salt and pepper to taste 11. 2 cups white fish fillets, cut into pieces 12. Fresh dill for garnish
Step 1: Prepare Vegetables
In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 3-4 minutes.
Step 2: Add Vegetables and Broth
Add the grated beets, grated carrot, and cubed potato to the pot. Pour in the vegetable broth, add the bay leaf, and bring to a boil. Reduce heat and simmer for 20 minutes.
