Prepare the Filling

Heat oil in a pan, add chopped mushrooms and sauté until tender. Season with salt and pepper and set aside.

Prepare the Batter

In a bowl, mix eggs, grated zucchini, flour, salt, and pepper until well combined. Let it sit for 10 minutes.

Cook the Roll

Heat a non-stick pan over medium heat. Pour a portion of the batter into the pan, spreading it thinly. Cook until set, then place some mushroom filling inside and carefully roll it up. Repeat for remaining batter and filling.

Serve

Slice the rolls and serve warm, optionally with a dipping sauce of your choice.
