Ingredients
- 2 boneless, skinless chicken breasts - 2 ripe avocados - 250g pasta (penne or fusilli recommended) - 2 cloves garlic, minced - 1 lemon (juice and zest) - 2 tablespoons olive oil - Salt and pepper to taste - Fresh basil for garnish (optional)
Instructions
1. Cook the pasta according to the package instructions until al dente. Drain and set aside. 2. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat. 3. Cook the chicken breasts for about 6-7 minutes per side, or until fully cooked. Remove from skillet and let cool slightly. Then, slice into thin strips. 4. In a large bowl, combine the cooked pasta, minced garlic, lemon juice, and lemon zest. 5. Cut the avocados in half, remove the pit, and scoop out the flesh.
