Step 1: Prepare Ingredients
- 1 lb chicken breast - 2 carrots, sliced - 2 celery stalks, sliced - 1 onion, diced - 3 garlic cloves, minced - 6 cups chicken broth - 2 cups egg noodles - 1 tsp dried thyme - 1 bay leaf - Salt and pepper to taste - Fresh parsley, chopped (for garnish)
Step 2: Cook Chicken
In a large pot, add the chicken breasts and cover with water. Bring to a boil and then lower the heat to a simmer. Cook until the chicken is cooked through, about 15-20 minutes. Remove the chicken, let it cool, and then shred it with two forks.
Step 3: Sauté Vegetables
