- 2 chicken breasts - 1 cup buckwheat groats - 1 tablespoon olive oil - 1 onion, finely chopped - 2 garlic cloves, minced - 1 cup chicken broth - 1 cup water - Salt and pepper to taste - Fresh parsley, chopped (optional)

Instructions

1. Rinse the buckwheat groats under cold water and set aside. 2. Heat the olive oil in a large skillet over medium heat. 3. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for 6-8 minutes on each side, or until they are fully cooked through. Remove the chicken from the skillet and set aside. 4. In the same skillet, add the chopped onion and minced garlic. Cook until the onion is translucent and fragrant. 5. Add the rinsed buckwheat groats to the skillet, stirring to combine with the onions and garlic. 6. Pour in the chicken broth and water, and bring the mixture to a boil. 7. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the buckwheat is tender and the liquid has been absorbed. 8. Slice the cooked chicken breasts and serve them on a bed of buckwheat, garnished with fresh parsley if desired.
