Prepare the Ingredients

1. Wash and pat dry 2 boneless, skinless chicken breasts. 2. Wash and trim 2 cups of fresh spinach. 3. Peel and chop 4 medium-sized potatoes.

Cook the Chicken

1. Season the chicken breasts with salt, pepper, and your choice of herbs or spices. 2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. 3. Cook the chicken breasts for 5-7 minutes on each side, or until the internal temperature reaches 165ยฐF (74ยฐC). Remove from the skillet and set aside.

Prepare the Mashed Potatoes

1. Place the chopped potatoes in a pot of salted water. 2. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes. 3. Drain the potatoes and return them to the pot. 4. Add 1/2 cup of milk, 2 tablespoons of butter, salt, and pepper to taste. 5. Mash until smooth and creamy.

Wilt the Spinach

1. In the same skillet used for the chicken, add the fresh spinach. 2. Cook for 2-3 minutes until wilted, stirring occasionally. Season with salt and pepper.

Assemble the Dish

1. On each plate, place a serving of mashed potatoes. 2. Top with the wilted spinach. 3. Slice the chicken breasts and place on top of the spinach. 4. Serve immediately and enjoy!
