Prep the kitchen

Begin by gathering all your ingredients and preheating your oven to 350°F (175°C). Make sure you have enough space to work comfortably.

Combine dry ingredients

In a large bowl, whisk together 250-300 grams of all-purpose flour, 5 grams of baking soda, and 5 grams of salt. Set this mixture aside.

Cream together sugars and butter

In another bowl, mix 100-150 grams of both granulated sugar and brown sugar with 100-150 grams of softened butter. Beat them until the mixture is light and fluffy.

Add eggs and vanilla

Gradually mix in 50-100 grams of eggs (approximately 1-2 eggs) and 5 grams of vanilla extract into the sugar-butter mixture until well combined.

Combine wet and dry ingredients

Slowly add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing to ensure your cookies stay soft and chewy.

Fold in mix-ins

Fold in 100-200 grams of chocolate chips or your choice of fruit and nut mix-ins. Stir until evenly distributed throughout the dough.

Bake the cookies

Scoop tablespoon-sized portions of dough onto a lined baking sheet, leaving space between each cookie. Bake for 10-12 minutes or until the edges are golden brown. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
