Ingredients

- 2 chicken breasts - 1 cup buckwheat - 1 cup mixed salad greens (lettuce, spinach, arugula, etc.) - 1/2 cup grated cheese (such as Parmesan or cheddar) - 1 tbsp olive oil - Salt and pepper to taste - Lemon juice (optional) - Your choice of salad dressing

Step 1: Prepare the Chicken

1. Preheat your grill to medium-high heat. 2. Season the chicken breasts with salt, pepper, and a drizzle of olive oil. 3. Grill the chicken breasts for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center.
