Preparation

Begin by preparing your ingredients: slice the chicken thinly, julienne the bell peppers, slice the onions and mushrooms. Ensure the glass noodles are prepared according to the package instructions.

Cooking

In a large skillet or wok, heat a small amount of cooking oil over medium heat. Add the sliced chicken and cook until it’s no longer pink. Remove the chicken and set aside. In the same skillet, add the bell peppers, onions, and mushrooms, stir-frying until they are just tender. Return the chicken to the pan, then add the cooked glass noodles and soy sauce. Mix well to ensure that the noodles, vegetables, and chicken are evenly coated with the sauce and heated through.
