Prepare the gelatin
Start by placing the gelatin in a bowl of cold water to hydrate it. This process, known as blooming, allows the gelatin to soften and dissolve more easily when mixed with the hot sugar syrup.
Cook the sugar syrup
In a medium saucepan, combine the sugar, corn syrup, and a small amount of water. Cook over medium heat, stirring until the sugar has dissolved. Once dissolved, increase the heat and bring the mixture to a boil. Use a candy thermometer to monitor the temperature and cook the syrup until it reaches the soft-ball stage (approximately 235-240°F or 113-115°C).
Whip the mixture

Set the marshmallows
