  • glutinous rice (50g)
  • red bean paste (20g)
  • white bean paste (20g)
  • starch (coating) (5g)
  • matcha (green tea powder) (2g)
  • yuzu flavor (1g)
  • mango flavor (1g)

🍳 How to cook (8 servings):

Cooking Time: 30 minutesPreperation Time: Overnight + 1 hour

Ingredients

1. Mochigome (glutinous rice) or mochiko (rice flour) 2. Water 3. Sugar (optional) 4. Starch (for dusting) 5. Fillings (red bean paste, white bean paste, or fruit-flavored fillings) 6. Flavorings (yuzu, mango for yellow mochi; matcha, yomogi for green mochi)

Preparing the Mochi

1. Soak mochigome in water overnight. 2. Steam the rice until it becomes soft. 3. Once the rice is cooked, pound it using a mortar and pestle or a mochi-making machine until it forms a sticky, uniform paste. 4. Optionally, mix in sugar and desired flavorings. 5. Divide the paste into portions, and flatten each to form a small disk.

Adding the Fillings

1. Place a small amount of your chosen filling in the center of each mochi disk. 2. Carefully wrap the mochi paste around the filling, sealing it inside. 3. Roll the mochi into a ball, then slightly flatten it.

Finishing Touches

1. Dust each mochi with starch to prevent them from sticking together. 2. Place them on a plate and refrigerate until set. They can also be enjoyed at room temperature.
