Cook the Oatmeal

1. In a pot, bring 2 cups of water (or milk for a creamier texture) to a boil. 2. Add 1 cup of oatmeal and reduce the heat to a simmer. 3. Cook for about 5-7 minutes, stirring occasionally, until the oats are soft and have absorbed most of the liquid. 4. Remove from heat and set aside.

Prepare the Salad

1. In a bowl, combine 2 cups of mixed greens, 1/2 cup of cherry tomatoes (halved), 1/4 cup of cucumber slices, and 1/4 cup of shredded carrot. 2. Add 1/2 avocado, sliced. 3. Drizzle with your favorite salad dressing and toss to combine.

Boil the Egg
