Pork Pilaf

1. Rinse 2 cups of rice under cold water until the water runs clear. Soak the rice for 30 minutes and then drain. 2. Heat 2 tablespoons of oil in a large pot over medium heat. Add 1 chopped onion and sauté until golden brown. 3. Add 1 pound of pork chunks and cook until browned on all sides. 4. Stir in 1 grated carrot and 1 chopped bell pepper, cooking until the vegetables are soft. 5. Add the drained rice to the pot, stirring to combine with the meat and vegetables. 6. Pour in 4 cups of broth or water and season with salt, pepper, and 1 teaspoon of cumin. 7. Bring the mixture to a boil, then reduce heat to low, cover the pot, and simmer for 20-25 minutes or until the rice is tender and the liquid has been absorbed. 8. Fluff the pilaf with a fork before serving.

Salad

1. In a large bowl, combine 2 cups of mixed greens, 1 sliced cucumber, 1 chopped tomato, and 1/4 cup of chopped red onion. 2. In a small bowl, whisk together 2 tablespoons of olive oil, 1 tablespoon of lemon juice, salt, and pepper. 3. Drizzle the dressing over the salad and toss to combine.
