Ingredients
- 1 cup long-grain rice - 2 cups water or vegetable broth - 1 tablespoon olive oil - 1 medium onion, diced - 2 cloves garlic, minced - 3 large tomatoes, diced - Salt and pepper to taste - Fresh basil or parsley for garnish
Instructions
1. Rinse the rice under cold water until the water runs clear. 2. In a medium pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes. 3. Add the minced garlic and cook for another 1-2 minutes, until fragrant. 4. Add the diced tomatoes to the pot and cook for about 5 minutes, until they start to break down. 5. Add the rinsed rice to the pot and stir to coat the rice in the tomato mixture. 6. Pour in the water or vegetable broth and bring to a boil. 7. Once boiling, reduce the heat to low, cover the pot, and simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed. 8. Fluff the rice with a fork, season with salt and pepper to taste, and garnish with fresh basil or parsley before serving.
