Prepare the Dough

Start by mixing flour, water, an egg, and a pinch of salt in a large bowl. Knead the mixture until a smooth dough forms. Let it rest for about 30 minutes, covered.

Make the Filling

Cook potatoes until tender, mash them, and then mix with grated cheese, finely chopped sautéed onion, and seasoning to taste. Let the filling cool before assembling the pierogi.

Assemble the Pierogi
