Preparation

Begin by rinsing the wild rice blend under cold water before cooking it according to package instructions. While the rice is cooking, prepare the seafood by cleaning and cutting it into bite-sized pieces. Set aside.

Cooking the Curry

In a large pan, heat some oil over medium heat. Add the cut seafood and sauté until they start to turn pink and are slightly cooked through. Remove the seafood from the pan and set aside. In the same pan, add tomato pieces and cook until soft. Then, stir in the coconut milk or cream and curry powder or curry sauce base. Bring the mixture to a simmer and let it cook for a few minutes to blend the flavors. Add the leafy greens and cook until they wilt.
