Preparation

1. Preheat your oven to 375°F (190°C). 2. Wash the bell peppers and cut off the tops. Remove the seeds and membranes from inside the peppers. 3. Place the bell peppers in a baking dish, standing upright.

Filling

1. In a large skillet, heat some olive oil over medium heat. 2. Add chopped onions and garlic, and sauté until they become translucent. 3. Add ground meat (beef, turkey, or chicken) and cook until browned. 4. Stir in cooked rice (or quinoa if preferred), diced tomatoes, corn, black beans, and your choice of seasonings (such as salt, pepper, cumin, and paprika). 5. Cook the mixture for about 5-7 minutes, allowing the flavors to blend together.

Assembly and Cooking

1. Spoon the filling mixture into each of the prepared bell peppers. 2. Top each pepper with a sprinkle of shredded cheese (omit for vegan/dairy-free option). 3. Cover the baking dish with foil and bake in the preheated oven for 30 minutes. 4. Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender and the cheese is melted and bubbly.
