Preparing the Sushi Rice

Begin by washing 200 grams of sushi rice under cold water until the water runs clear. Cook the rice according to package instructions, then season with a mixture of rice vinegar, sugar, and salt while still warm. Allow it to cool to room temperature before using.

Preparing the Fillings

Slice 100 grams of raw salmon and 80 grams of mango into thin strips. If using cream cheese, cut 30 grams into small pieces or strips. Set aside until needed.

Assembling the Sushi Rolls

Place a nori sheet on a bamboo sushi rolling mat. Spread an even layer of sushi rice over the nori, leaving about a 2cm margin at the top. Arrange slices of salmon, mango, and cream cheese over the rice. Using the mat, carefully roll the nori over the fillings, pressing gently but firmly to form a tight roll. Seal the edge of the nori with a little water if needed.

Slicing and Serving

With a sharp knife, cut the sushi roll into bite-sized pieces. Serve with soy sauce for dipping.
