- 2 cups cottage cheese - 1/2 cup all-purpose flour - 2 large eggs - 3 tbsp granulated sugar - 1 tsp vanilla extract - 1/2 tsp salt - 1/2 cup raisins (optional) - Vegetable oil for frying - Powdered sugar for dusting

Step 1: Prepare the batter

In a large mixing bowl, combine the cottage cheese, eggs, sugar, vanilla extract, and salt. Mix well until smooth. Gradually add the flour, mixing until just combined. If using, fold in the raisins gently.

Step 2: Shape the pancakes

Dust your hands with some flour and take a small portion of the batter (about 2 tablespoons). Shape it into a small patty or pancake (about 1/2 inch thick). Repeat with the remaining batter.

Step 3: Fry the pancakes

Heat a few tablespoons of vegetable oil in a skillet over medium heat. Fry each pancake for about 3-4 minutes on each side, or until golden brown and cooked through. Be careful not to overcrowd the skillet; fry in batches if necessary.

Step 4: Serve
