Ingredients
- 2 tablespoons olive oil - 1 onion, diced - 2 cloves garlic, minced - 2 carrots, sliced - 2 celery stalks, sliced - 1 zucchini, diced - 1 cup green beans, cut into 1-inch pieces - 6 cups vegetable broth - 1 cup egg noodles (or any noodles of choice) - 1 teaspoon dried thyme - 1 teaspoon dried basil - Salt and pepper to taste - Fresh parsley, chopped (for garnish)
Instructions
1. Heat the olive oil in a large pot over medium heat. Add the diced onion and mince garlic, and sauté until the onion becomes translucent. 2. Add the sliced carrots and celery to the pot, and cook for about 5 minutes until they start to soften. 3. Stir in the zucchini and green beans, and cook for another 3 minutes. 4. Pour in the vegetable broth and add the dried thyme and basil. Bring the mixture to a boil. 5. Once boiling, add the noodles to the pot. Reduce the heat to a simmer and cook according to the noodle package instructions, usually about 7-10 minutes. 6. Season the soup with salt and pepper to taste. 7. Serve hot, garnished with fresh parsley.
