🥗 Ingredients:

  • potato (100g)
  • carrot (50g)
  • celery (30g)
  • spinach (20g)
  • onion (30g)
  • butter (10g)
  • vegetable stock (200g)
  • salt (5g)
  • pepper (2g)

🍳 How to cook (6 servings):

Cooking Time: 40 minutesPreperation Time: 15 minutes

Prepare Ingredients

Chop 1 onion, 2 carrots, 2 stalks of celery, and 3 cloves of garlic. Dice 3 potatoes and 2 zucchinis. Chop 1 cup of green beans and 1 cup of spinach. Open and drain 1 can of diced tomatoes.

Cook Vegetables

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the onion, carrots, and celery and sauté for 5 minutes until vegetables are tender. Add garlic and cook for another minute.

Add Broth and Simmer

Add 6 cups of vegetable broth to the pot. Bring to a boil, then reduce heat and let it simmer for 10 minutes.

Add Remaining Vegetables

Add potatoes, zucchinis, green beans, and diced tomatoes to the pot. Continue to simmer for another 20 minutes until all vegetables are tender.

Season and Serve

Add spinach to the pot and stir until wilted. Season soup with salt, pepper, and 1 teaspoon of thyme. Serve hot and enjoy.
