  • pork (100g)

Prepare Ingredients

1. Grate 2 medium-sized zucchinis into a large bowl. 2. Sprinkle 1 teaspoon of salt over the grated zucchini and let it sit for 10 minutes. 3. While waiting, finely chop 1 small onion and 2 cloves of garlic. 4. Squeeze out excess moisture from the zucchini using a clean kitchen towel or cheesecloth.

Mix Ingredients

5. In a large mixing bowl, combine the drained zucchini, chopped onion, and garlic. 6. Add 1/2 cup of crumbled cooked pork (bacon or sausage can be used). 7. Stir in 1/2 cup of all-purpose flour, 1/2 teaspoon of baking powder, 1/4 teaspoon of black pepper, and 2 beaten eggs. 8. Mix until all ingredients are well combined.

Cook Fritters

9. Heat 2 tablespoons of olive oil in a large skillet over medium heat. 10. Scoop 1/4 cup of the zucchini mixture and place it in the skillet, flattening it slightly with the back of a spatula. 11. Cook for about 3-4 minutes on each side, or until golden brown and crispy. 12. Transfer cooked fritters to a plate lined with paper towels to remove excess oil. 13. Repeat with the remaining zucchini mixture, adding more oil to the skillet as needed.
