Preparation of Eggplant

Begin by slicing the eggplants into even, half-inch thick rounds. Sprinkle salt over the slices and let them sit for about 20 minutes to draw out bitterness. Rinse with water and pat dry with paper towels. For a crispier exterior, optionally coat the eggplant slices in breadcrumbs.

Cooking Eggplant

Heat olive oil in a pan over medium heat. Fry the eggplant slices until they are golden brown on both sides. Remove from the pan and set aside on paper towels to drain excess oil.
