🍳 How to cook (1 serving):
Ingredients
- 1 ripe avocado - 2 large eggs - Salt and pepper to taste - Optional: red pepper flakes, chopped chives, or other preferred toppings - Whole grain toast (optional)
Instructions
1. Cut the avocado in half, remove the pit, and scoop out some of the flesh to create a larger well for the egg. 2. In a non-stick pan, lightly oil or butter the surface. 3. Heat the pan over medium heat, then crack the eggs into the pan. 4. Cook the eggs until the whites are set but the yolks are still runny, or to your preferred level of doneness. 5. While the eggs are cooking, season the avocado halves with a pinch of salt and pepper. 6. Once the eggs are done, carefully transfer each cooked egg into the well of the avocado halves. 7.
