Ingredients

- 1 cup buckwheat groats - 2 cups water - 1 lb chicken breast, diced - 1 red bell pepper, diced - 1 zucchini, sliced - 1 carrot, julienned - 1 onion, chopped - 2 cloves garlic, minced - 2 tablespoons olive oil - Salt and pepper to taste - Fresh parsley for garnish

Instructions

1. Rinse the buckwheat groats under cold water. 2. In a medium saucepan, bring 2 cups of water to a boil. Add the buckwheat groats, reduce the heat, cover, and simmer for about 15 minutes or until the water is absorbed and the groats are tender. Set aside. 3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and golden. 4.
