- flour (125g)
- milk (250g)
- eggs (100g)
- butter (10g)
- sugar (20g)
- mixed berries (100g)
- sugar for sauce (30g)
🍳 How to cook (4 servings):
Prepare Crepe Batter
In a blender, combine 1 cup of all-purpose flour, 2 large eggs, 1/2 cup of milk, 1/2 cup of water, 1/4 teaspoon of salt, and 2 tablespoons of melted butter. Blend until smooth. Let the batter rest for at least 30 minutes in the refrigerator.
Cook the Crepes
Heat a lightly oiled non-stick frying pan over medium-high heat. Pour about 1/4 cup of batter into the pan, tilting the pan in a circular motion so that the batter coats the surface evenly. Cook for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Set aside and repeat with the remaining batter.
Prepare Berry Sauce
In a saucepan over medium heat, combine 2 cups of mixed berries (such as strawberries, blueberries, and raspberries), 1/4 cup of sugar, and 1 tablespoon of lemon juice. Stir occasionally and cook until the berries have broken down and the sauce has thickened, about 10 minutes. Remove from heat and allow to cool slightly before serving.
Serve
Place crepes on a plate, spoon the berry sauce over them, and if desired, garnish with powdered sugar and fresh mint leaves. Serve warm.
