Cooking Time: 30 minutesPreperation Time: 40 minutes

Preparation of Ingredients

Gather all ingredients. Clean and slice the cucumber, cut the tomato into wedges or chunks, crumble or dice the feta cheese, and wash and dry the lettuce leaves. Prepare a marinade for the chicken with olive oil, vinegar, herbs, salt, and pepper.

Marinate the Chicken

Marinate the chicken leg quarter with the prepared mixture, ensuring it is well-coated. Allow to marinate for at least 30 minutes to several hours in the refrigerator for the flavors to infuse.

Grill the Chicken

Preheat your grill. Once ready, place the marinated chicken leg quarter on the grill and cook for about 25-30 minutes, turning occasionally until the chicken is well cooked and has a nice char on the outside.

Prepare the Salad

While the chicken is grilling, prepare the salad by tossing the sliced cucumber, tomato wedges, crumbled feta cheese, and lettuce in a large bowl. Prepare a dressing by whisking together olive oil, vinegar, salt, and pepper, then drizzle over the salad and toss to mix well.

Serve

Once the chicken is grilled to perfection, let it rest for a few minutes before serving alongside the fresh salad. Optionally, you can remove the chicken from the bone and slice it before adding it to the salad or serve it as a whole piece on the side.
