Dough Preparation
Start by combining 200 grams of flour with a pinch of salt. In a separate bowl, whisk an egg with about 1/2 cup of water. Gradually add the wet ingredients to the flour, kneading until a smooth dough forms. Cover and let it rest for about 30 minutes.
Filling Preparation
For the filling, boil approximately 150 grams of potatoes until tender. Mash the potatoes and mix with around 50 grams of cheese (optional), finely chopped onions, salt, and pepper to taste. Adjust the quantity as needed for desired consistency and flavor.
Forming and Cooking Pierogis
Roll out the dough on a lightly floured surface until thin. Cut out rounds using a glass or cookie cutter. Place a spoonful of filling in the center of each round, fold over, and press the edges to seal. Boil the pierogis in salted water for about 5 minutes or until they float to the surface.
