Prepare the ingredients

Gather all the necessary ingredients. Start by washing the beets and orange under cold water. Peel the beets and slice them thinly. Peel the orange and cut into thin slices. Slice a quarter of an avocado neatly. Set your eggs out to reach room temperature for more consistent cooking results.

Poach the eggs

Bring a pot of water to a gentle simmer. Add a small splash of vinegar (optional) to help the eggs keep their shape. Crack each egg into a cup, then carefully slide them into the simmering water. Poach for about 3-4 minutes, or until the whites are set but the yolks remain runny. Remove with a slotted spoon and drain on a kitchen towel.

Toast the bread
