Step 1: Prepare the Potatoes

Wash and peel the potatoes. Using a mandolin or a sharp knife, slice the potatoes very thinly. You can also use a food processor with a slicing attachment.

Step 2: Rinse and Soak

Place the potato slices in a bowl and rinse under cold water to remove excess starch. Soak the slices in cold water for about 30 minutes. This helps to make the chips crispier.

Step 3: Dry the Potatoes

Drain the potato slices and pat them dry with paper towels. Make sure they are as dry as possible.

Step 4: Heat the Oil

In a deep fryer or a large pot, heat vegetable oil to 350°F (175°C). Make sure you have enough oil to fully submerge the potato slices.

Step 5: Fry the Potatoes

Carefully place a few slices of potatoes in the hot oil, making sure not to overcrowd the pot. Fry until golden brown and crispy, about 3 to 5 minutes. Remove with a slotted spoon and drain on paper towels.

Step 6: Season the Chips

While the chips are still warm, season them with salt or your favorite seasoning blend. Toss to coat evenly.
