Steamed Rice

Start by rinsing 1 cup of white rice until the water runs clear. Soak the rice for 20 minutes, then drain. Add the rice to a pot with 1.5 cups of water. Bring to a boil, then reduce to a simmer, cover, and let cook for 18 minutes. Remove from heat and let it sit, covered, for 10 more minutes.

Rice Shaping

Once cooled slightly, mold the steamed rice into the shape of a sleeping dog on a plate, using your hands or a rice mold if available. Use small pieces of nori (black seaweed) to create the ears and facial details of the dog.

Creamy Curry Sauce

In a saucepan, combine 1 cup of coconut milk, 2 tablespoons of yellow curry paste, a pinch of salt, and sugar to taste. Bring to a simmer over medium heat, stirring occasionally, until the sauce thickens slightly. Adjust seasoning as necessary.

Pumpkin/Squash Puree

Peel and cube one medium pumpkin or squash. In a pot, boil the squash with enough water to cover until tender. Drain and return to pot, adding 2 tablespoons of cream and 1 tablespoon of butter. Blend until smooth using an immersion blender or in a countertop blender. Season with salt and pepper to taste.

Assembly & Garnish

Spoon the creamy curry sauce or pumpkin/squash puree onto the plate, partially covering the rice dog. Decorate with two small tomatoes and a sprinkle of green herbs, such as parsley or cilantro, for garnish.
