  • salmon (100g)
  • arugula (50g)
  • avocado (50g)
  • tomato (30g)
  • olive oil (10g)

Cooking Time: 15 minutesPreperation Time: 15 minutes

Prepare the Salmon

1. Preheat your oven to 400°F (200°C). 2. Season the salmon fillets with salt, pepper, and a drizzle of olive oil. 3. Place the salmon on a baking sheet lined with parchment paper. 4. Bake in the preheated oven for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork. 5. Remove from the oven and let cool slightly. Break into bite-sized pieces.

Prepare the Salad

1. In a large bowl, combine 4 cups of fresh arugula, 1/2 thinly sliced red onion, and 1 cup of cherry tomatoes cut in halves. 2. Add the salmon pieces to the bowl.

Prepare the Dressing

1. In a small bowl, whisk together 3 tablespoons of olive oil, 1 tablespoon of lemon juice, 1 teaspoon of Dijon mustard, 1 minced garlic clove, salt, and pepper to taste.

Assemble the Salad
