  • cooked white rice (100g)
  • milk, full-fat (200g)
  • sugar (15g)
  • cinnamon (1g)

Step 1

Combine cooked white rice, milk, sugar, and a pinch of salt in a saucepan. Bring to a low boil, then simmer, stirring frequently until the mixture thickens.

Step 2

Beat an egg (if using) in a separate bowl. Temper the egg by slowly whisking in a bit of the hot rice mixture, then pour the egg mixture back into the saucepan, stirring rapidly to prevent curdling.

Step 3

Remove from heat and stir in vanilla extract. Allow to cool slightly before serving; sprinkle with cinnamon to taste.
