🌎 Mediterranean: Seafood

🥗 Ingredients:

  • zucchini (200g)
  • mussels (150g)
  • olive oil (20g)
  • garlic (5g)
  • parsley (10g)
  • lemon juice (10g)
  • salt (2g)
  • pepper (2g)

🍳 How to cook (4 servings):

Cooking Time: 10 minutesPreperation Time: 20 minutes

Step 1

Spiralize the zucchinis into thin noodle-like strands, and set them aside.

Step 2

In a large pan, heat a bit of olive oil over medium heat. Add chopped garlic and shallots (or onions), sauté until fragrant.

Step 3

Increase the heat to high and add the mussels to the pan. Pour in a splash of white wine or broth, cover the pan, and let the mussels steam until they open, about 5 minutes. Discard any mussels that do not open.

Step 4

Remove the mussels from the pan and set aside. To the same pan, add the zucchini noodles and sauté for a few minutes until just tender. Avoid overcooking to prevent the noodles from becoming mushy.

Step 5

Return the mussels to the pan, mix gently with the zucchini noodles. Season with salt, pepper, and fresh herbs like parsley or basil according to taste.

Step 6

Serve the zucchini pasta with mussels hot, garnished with additional fresh herbs and a wedge of lemon.
